Naming teas by processing, not by leaf colour

Every true tea comes from the same plant, Camellia sinensis. What separates white, green, yellow, oolong, black, and dark tea is which manufacturing steps the leaves undergo, especially how far enzymatic oxidation progresses.

Plucked leaves move through some combination of withering, shaping or rolling, oxidation, fixation (halt oxidation), and drying, in different orders and to different degrees. White tea is essentially withered and dried. Green tea is fixed early so oxidation barely starts. Black tea is rolled and allowed to oxidize fully. Oolong sits deliberately in between, and yellow tea adds a slow, enclosed yellowing step after fixation.

Turn this into a matrix: categories as rows, processing steps as columns, and a mark in each cell the leaf actually receives. When you meet any tea in your studies, place it in the matrix first and only then attach its name. Then compare two teas inside one category, such as a steamed green and a pan-fired green, and ask which single step difference explains the aroma gap. Treat liquor colour as a hint, never as the category's definition.

Oxidation versus fermentation: two words that keep colliding

Oxidation is enzymatic: ruptured cells let polyphenol oxidase convert catechins into compounds that darken liquor and shift flavour. Fermentation is microbial: microorganisms transform the leaf over time, as in dark teas such as puerh.

In black tea manufacture, rolling and rolling-breaking break cell walls and expose catechins to polyphenol oxidase. The catechins convert into theaflavins and thearubigin-like compounds, which is why the liquor turns amber to red-brown and the taste moves toward malt and dried fruit. This is a chemical reaction driven by the leaf's own enzymes, with oxygen playing the central role. No microorganisms are required.

Dark teas work differently. After fixation stops the leaf's enzymes, microorganisms drive the transformation, slowly in naturally aged raw puerh or more quickly in a deliberately pile-fermented style. Now run a self-check on your own notes: find any line that calls black tea 'fermented' or calls a dark tea 'fully oxidized like black tea.' Both lines conflate the two processes, and each one hides a different cup profile that a corrected note would make visible.

A tasting vocabulary you can defend in writing

Practise a fixed note structure: dry leaf, wet leaf, liquor colour, aroma, taste, mouthfeel, finish. Inside it, separate bitter (a taste), astringent (a tactile drying effect), and umami (savoury sweetness) instead of blending them.

Bitterness arrives through taste receptors, largely from caffeine, and appears at the tip and back of the tongue. Astringency is not a taste at all: catechins bind proteins in saliva, producing a drying, puckering texture. Theanine contributes a savoury, brothy sweetness. Notes that say only 'smooth and delicious' cannot be compared across teas, cannot be challenged, and give you nothing to study from, because no specific compound or processing decision is implicated.

Train the vocabulary with a contrast exercise rather than by memorizing adjective lists. Brew the same green tea twice: once hotter and longer, once cooler and shorter. Write two structured notes and underline every attribute that changed between them. You should observe bitterness climbing with heat and time, astringency thickening in the hotter cup, and the cooler cup preserving more of the sweet, brothy character. A note you can defend always names an attribute, an intensity, and the observation that supports it.

Worked scenario: the amber cup that is not black tea

A liquor's colour cannot settle a category call. A heavily oxidized oolong can pour amber and honeyed, so a defensible identification must weigh leaf appearance, oxidation logic, and aroma, not the colour of the cup alone.

Scenario: you are handed a cup with a bright amber liquor and notes of ripe fruit and honey, and your study note reads 'black tea, amber liquor, honey aroma.' The plausible mistake is naming the category from colour. Look instead at the wet leaves: green centres with red-bronze rims, a whole-leaf structure, and an aromatic profile dominated by ripe stone fruit and honey rather than malt and cocoa. That combination points to a heavily oxidized oolong, in the style of an Oriental Beauty, not to black tea.

The better decision is to identify the category from the manufacturing evidence: partial oxidation leaves green tissue at the leaf's centre, and the aroma vocabulary belongs to oolong's range. Why it matters: your infusion and service recommendations follow the category. Treating it as black tea pushes you toward long, aggressively hot steeps that flatten the aromatics, and toward pairings built for malty black tea rather than the honeyed, fruity profile in the cup.

Worked scenario: diagnosing a bitter, grassy green tea

A harsh green cup calls for diagnosis, not a verdict of bad tea. Work through leaf-to-water ratio, water temperature, and steeping time, and separate bitterness from astringency before deciding what to change.

Scenario: a grassy, harsh, puckering cup of green tea, and your first note says 'poor-quality tea; brew it with boiling water to get more flavour.' That reasoning stacks two errors. Boiling water extracts catechins and caffeine more aggressively, which increases exactly the harshness you are tasting, and it treats a brewing-variable problem as a leaf-quality problem. A defensible answer instead traces the flaw to a cause you can correct.

The better decision: distinguish the sensations first — bitterness on the tongue is a taste, while the drying, fuzzy coating on the teeth is astringency — then adjust one variable at a time. Drop the temperature to roughly 70–80 °C, shorten the steep, and rebalance the leaf-to-water ratio before judging the leaf. If the cooler cup shows seaweed sweetness and a brothy, savoury body, the tea was fine and the infusion was the problem. This habit of linking a sensory flaw to a specific correctable cause is the transferable skill behind tasting and service questions alike.

Cultivars, plucking standards, and grading terms that carry meaning

Layer origin knowledge on top of processing. Learn which terms carry testable information — plucking standard, varietal group, orthodox versus CTC manufacture — and which are packaging language with no fixed definition.

A plucking standard such as 'two leaves and a bud' describes what was harvested and predicts concentration and delicacy. The varietal split between Chinese-type (sinensis) and Assam-type (assamica) plants shapes leaf size, hardiness, and cup character. Manufacture style matters: orthodox rolling keeps leaf integrity and supports whole-leaf grades, while CTC crushing, tearing, and curling produces small, dense granules built for fast, strong extraction. Flush labels such as first flush indicate harvest timing and seasonality, which explains flavour differences without invoking quality slogans.

Grade vocabulary describes leaf size and appearance in orthodox manufacture — terms with 'tippy' or 'flowery' signal a high proportion of bud and tip — but grade alone is not a quality verdict, since cupping confirms quality. Practise by taking one trade name from a real package and translating it into expectations: which steps, which plant type, what leaf appearance, what likely aroma anchors. Then cup it and check which predictions held. Terms that survived the cup are the ones worth committing to memory; marketing labels that predicted nothing can be set aside.

A cupping routine, a rubric, and a preparation sequence

Run a weekly blind cupping of one tea per category, write structured notes before reading the packaging, and score yourself against a rubric. Layer a short, adaptable sequence over several weeks so each skill lands on the last.

Exercise: have a friend wrap and number six teas, one per category, or wrap them yourself days earlier so you forget which is which. Cup each with a consistent leaf-to-water ratio, write a full structured note, commit to a category call, and propose one infusion adjustment with a predicted effect — only then unwrap the packages. Expected observations as the weeks pass: your notes gain named attributes instead of generic praise, your category calls start citing processing evidence such as leaf rims or aroma anchors, and you catch at least one of your own misidentifications before revealing the label, which is the strongest signal the matrix is working.

Self-check rubric, scored per cupping (learning milestones only, not predictions of any exam result): two points for a category call supported by two processing observations; two points for at least three distinct sensory attributes including one aroma and one mouthfeel term; two points for an infusion adjustment paired with a predicted effect; one point for a service or pairing implication. A realistic eight-week sequence: weeks one and two, build the processing matrix; weeks three and four, blind cupping with the rubric; week five, brewing-variable experiments; week six, dark tea and fermentation notes; week seven, pairing practice; week eight, timed note-writing under mild pressure.

  • Readiness check 1: reproduce the full category-versus-steps matrix from memory, including where oxidation and fermentation each apply.
  • Readiness check 2: complete one blind cupping with a defensible category call and a note scoring at least six of seven on the rubric.
